AL-WADI FACTORY
Al-Wadi is the only factory in Singapore that produces Pita Bread. It only started operation 3 years ago. Al-Wadi is located near Eunos Technolink at Ubi Road 1. This small but comely factory packs a prolific output. It can make 6000 pita bread in just one hour. Al-Wadi utilizes a fully automatic traditional Lebanese set-up. This machine is top-standard. Al-Wadi has satisfied the safety and health standards of a factory. It has achieved an AVA license. The pita bread has been certified halal by the Majlis Ugama Islam Singapore (MUIS).
Production
The production process is simple. It is made up of minimal number of stages. Note that the whole process is fully automatic therefore, human touch is relatively minimal. A mixture of salt, yeast and flour is placed in a mixer-machine. Subsequently, appropriate amounts of water (5 degrees Celsius) are then added into the mixture to transform the whole contents into dough.

The dough will then be transferred into a cutter machine where it will be cut into small, proportionate pieces.

These cutted pieces will be directed onto a moving leathery conveyor belt, in which they will travel for almost 80 metres. The purpose for traveling such distance is for the yeast to act as a leavening agent on the dough. The yeast will rise through this distance of 80 metres. When these pieces have reached the end of this leathery conveyor belt, they will be flattened into round, flat, regular-shaped dough. Snows of flour are sprinkled onto these flattened doughs to get them ready while they travel for a further 80 metres away towards the incoming burning oven.
The oven is a stretch of sealed chamber with hot blowing fire. The temperature in this oven is approximately 630 degree Celsius. As the flattened doughs travel through this furnace, each of them will balloon out, cooked, finally turning into edible pita bread. All these that are exiting out of the oven are baking hot crispy! At this stage, these crisp pita breads give the most original of aromas and taste.

After the oven has given birth to Al-Wadi’s original pita bread, these baking hot breads will have to travel for another 60 metres on a conveyor belt made up of miniature, non-corrosive metal girders. This is for the breads to have enough time to cool down before eventually packing them into bags of 5.

This is the last stage of the whole production process. At this stage, efficiency is instrumental. 3 workers will work hand-in-hand to pack these pita breads into their respective bags according to amounts dictated by the orders. The packed pita breads will then be sorted out into these large plastic containers for shipping or distribution.

These hot and fresh pita breads will be shipped to El-sheikh restaurant for its daily operation. Al-Wadi also caters for establishments such as Mustafa Centre, Canadian International Schools, CIAS and various Arabic restaurants.
